Quinoa Protein Bars

I was traveling this past weekend and like to bring my own snacks so I don't find myself with a stomach ache on the plane! I made these quinoa protein bars and they were the PERFECT travel snack!

INGREDIENTS:
  • 1/3 cup cooked quinoa 
  • 16 no sugar added whole (pitted) dates
  • 1/2 cup raw unsalted almonds
  • 1/3 cup natural crunchy almond butter
  • 1/4 cup Dark chocolate chips
  • 1 Tablespoon honey

DIRECTIONS:
  1. Put dates into a food processor and pulse until they form a ball.
  2. Remove the dates (place into a mixing bowl) and add almonds into the food processor, pulse until finely minced.
  3. Add dates, almonds, almond butter, and quinoa into the food processor. Pulse until all ingredients are well combined. 
  4. Place the mixture into a mixing bowl and start to shape into 6 2" by 1" bars. 
  5. In a small saucepan melt chocolate chips, and honey over low heat. Once melted, spread a thin layer of chocolate over the top of each bar. 
  6. Place bars into the refrigerator and allow chocolate to harden
  7. Enjoy!

Country Heat: Southern Spiced French Toast

Growing up I use to LOVE the weekends because that is when my dad would make us french toast. And although the calories can add up, I love everything about it. That is why I was pumped when I saw the Southern Spiced French Toast recipe in the Country Heat meal plan! I tried it out asap, and it was just what I needed in my life! 

MAKES 4 SERVINGS, 1 slice each
CONTAINER EQUIVALENTS (per serving): 1 yellow, 1/2 purple, 1/2 red, 1/2 blue, 1 tsp.


INGREDIENTS:
  • 4 large eggs
  • 1/4 cup unsweetened almond milk 
  • 1 Tbsp. pure maple syrup
  • 1 tsp. pumpkin pie spice
  • 4 slices low-sodium sprouted whole-grain bread
  • 2 tsp. extra-virgin organic coconut oil 
  • 1 large banana
  • 1/2 chopped raw pecans, toasted

DIRECTIONS
  1. Combine eggs, almond milk, maple syrup, and pumpkin pie spice in a shallow pan; whisk to blend.
  2. Soak each slice of bread in egg mixture for 2 minutes, turning halfway.
  3. Heat oil in medium nonstick skillet over medium heat. 
  4. Add bread; cook for 2 to 3 minutes on each side, or until golden brown.
  5. Top each slice evenly with banana and pecans, serve immediately!

For years we have had the opportunity to possibly win money from Beachbody just for turning in our results from the programs, but the new Beachbody Health Bet happening next month is bringing it to a whole new level! Country Heat Creamy Cauliflower Mash

As a kid I was OBSESSED with mashed potatoes, but as I grew older I realized I couldn't eat them as much because they just don't fit into my meal plan the way I would like. I am all about the healthy swaps, but when I first heard about mashed cauliflower I thought there was no way in hell it would replace mashed potatoes for me. I must say that once again I was wrong. Of course from time to time I will go for regular mashed potatoes, but the mashed cauliflower recipe from the Country Heat Eating plan is on point! So good!


1 green Container, 1/2 tsp.

INGREDIENTS
  • 8 Cups cauliflower florets, washed, patted dry
  • 2 cloves garlic, crushed
  • 1/3 cup unsweetened almond milk 
  • 3 tsp. extra-virgin olive oil 
  • 1/2 tsp. Himalayan salt 
DIRECTIONS 
  1. Boil water in steamer or large saucepan over high heat. Reduce heat to medium-high. Place cauliflower and garlic in steamer basket; cook for 10 to 12 minutes, or until tender.
  2. Place cauliflower mixture, almond milk, oil, and salt in food processor; pulse until smooth.
  3. Serve hot!

Country Heat Review and Test Group!

I just completed 30 days of the new Beachbody workout, Country Heat, and I am absolutely blown away by my results! For 30 days I danced and followed an easy to understand nutrition plan. I lost 7 pounds and 9.5 inches from my body during that time. The part that has me absolutely blown away is that it's from dancing! Nothing else! 


When I was chosen to be part of the Country Heat Test Group I was a little wary of giving up my regular workout routine with weights to dance to country music. I was under the impression that my body type needed to be lifting weights to see results, but I was wrong! I was expecting Country Heat to be a line dance, but it wasn't. I heard the creator, Autumn Calabrese describe it perfectly when she called it, "cardio dance fitness TO country music". For people who don't love cardio they WILL love this cardio! I am not a cardio lover and I found myself looking forward to this workout every day. Not only that, but I could tell that the moves were actually working my entire body as well! My core, butt, and thighs were toning up, and my body was tightening. 

The meal plan was similar to the 21 Day Fix and was really easy for me to follow. I never once during the workout felt hungry or deprived.

Country Heat Update

As some of you may know, I was lucky enough to be one of the coaches chosen to participate in the Country Heat Test Group before its release in July 2016. Now I can't go into detail about the program, because then I would have to kill you, but I can share bits and pieces of the journey thus far. 


First, I am having an absolute BLAST doing the workouts. I have yet to dread working out, because honestly dancing and having fun puts my in a good mood and these do not feel like workouts although they are. I really want to see results with this program so I have been very disciplined in following the nutrition plan and workout schedule. I will admit, I was skeptical about seeing results because I thought, "It's just dancing"...but I am seeing them!

At the end of week 1 I was down 5 pounds which was my goal for the entire program! Since then I have just been maintaining and continuing to do the workouts and eat clean. My goal for the end of the 30 day program is to have abs, and I feel like at this point that is a very obtainable goal. 



So here is what you should know about Country Heat

-As long as you follow the schedule and nutrition plan you will see results! 
-The workouts are short and fun!
-Anyone can do it/there is a modifier
-I am dripping sweat by the end of each workout

I really can't say much more at this point, but I HIGHLY recommend doing this program once it is released. This is the most fun I have had getting in shape.

Dance Like No One's Watching

In January I declared 2016 the year of dancing like no one is watching, so when I found out I was chosen to be a part of the Country Heat Test Group I was absolutely pumped!

Country Heat is a new dance fitness program from trainer Autumn Calabrese that incorporates country music and line dancing paired with a dialed in nutrition plan that focuses on portion control. 

For 30 days I get to take part in this test group and do the program before it is released to see what it is all about, and what the results will be! 


So what is Country Heat all about? It is a high energy, low impact dance workout that will have you sweating, laughing, and oblivious to the fact that you are even working out!

This workout is for anyone who is looking for an easy and fun way to get active and lose weight especially if you like to dance!

Off the Road of Self Destruction

I am beyond proud of this woman and what she has accomplished in just a short amount of time! 

This is Michelle. Last month Michelle found herself in a hospital with chest pains, and it wasn't the first time she had been there. Michelle knew she needed to make a change to better her health, but wasn't quite ready. Events that happened in the following weeks pushed her to make the changes necessary to get off the road of self destruction. She started using the 21 Day Fix Workouts and meal plan and in just a short amount of time started feeling and seeing a difference. Earlier today Michelle posted her first progress pics since starting the program last month. I am excited to continue to watch Michelle on this journey!!

"This is a tough post. But who needs a Friday to be Fearless!
My Story....So Far..................

I was fat, unhealthy, and literally killing myself with food. I ate fast food 7 days a week. I just didn’t care. I had bought a challenge pack from Beachbody, I even did a few challenge groups. By did, I mean I was listed in the groups. I didn’t actually do much of anything. I continued eating, for the most part, exactly how I had for decades. Crap piled on top of crap. I knew why I felt so awful. I just made the choice to not do anything about it. I didn’t realize how unhappy I was in general. I had no clue. I was tired. ALL THE TIME. I would be completely exhausted from an 8 hour shift. I had been in the ER for chest pains. They noticed a significant change in my EKG. If I continued on the path of self destruction I was on I would most likely have a heart attack. That was enough to make me change, right? I’d like to say yes but that would be a lie. No it wasn’t. I still ate what I wanted. I remember saying to someone that I didn’t want to die. But I’m not sure I really cared if I did. I mean, I wasn’t doing anything to change it. I started eating a little healthier….but not really. If you’re eating healthy 25% of the time you’re still eating unhealthy.

April 21, 2016 Prince died. How on earth can this be part of my story, right? I know. It’s crazy but it is part of it. I grew up with Prince’s music. Prince made me ok with my total weirdness. Prince made it ok to be me regardless of who that was. But it was more than that. I guess I sat here thinking well if this guy whom for decades jumped from 20 foot rafters could die I guess I could too. I somehow thought he was invincible. Everybody was talking about his legacy. What would my legacy be? That I ate myself to death? That’s not much of a legacy. I just suddenly realized with his passing that I was very unhappy in general. (For the record this has nothing to do with Jay. This experience has only made me love him more.) I wanted more out of life. I had many dreams earlier that I was taking steps to fulfill and I just stopped. I lost myself. I’m not sure how it happened but a good chunk of me was gone. And until this day I had no clue. None. His death hit me in such a profound, life changing way. It was like a mirror showing me the truth. Is this how I wanted my story to end? No, not by a longshot.

So I started eating the way I was supposed to. I started drinking the Shakeology I had paid for, every day as you’re supposed to. Something miraculous happened. My energy increased ridiculously! I mean ridiculously. I went from sleeping 11 hours a night and still being tired to sleeping 5 hours a night and waking up with loads of energy. My store has been cleaned many times…..not because I didn’t want to do it before, but, because I now had the energy. I have so much energy that every day I have to find things to do. I cannot be sedentary anymore. I won’t stop going on about these things I’m doing because I feel so amazing! And if one person tries these things and their life changes because of it then my goal is accomplished.. For the first time in a long time I wake up daily so happy to be alive. I love myself again. I am transformed. I have been awoken. I won’t go back to sleep."

22 Minute Hard Corps Week 4 Meal Plan

I'm onto week four of 22 Minute Hard Corps and I have only done resistance 3 so far, but all I can say is HOLY HELL! Just when I thought the gorilla crawls were getting easier a whole new array of moves are introduced...THANKS TONY! 

All kidding aside I do feel like I am getting much stronger and am still beat after every single workout! My meal plan is set for week four and I am ready to tackle the week!
