Low Carb Cauliflower Hummus

I love this low carb lifestyle, but I have really been missing hummus. As you all know I am a huge believer in clean keto and have been doing my best to share all of the clean keto recipes that I come across. This hummus recipe is healthy, low carb, and makes a great base for all other hummus flavors if you want to spice it up a little. I definitely recommend giving this recipe a try, and if you are looking for something to pair it with the Joseph's bread pictured above is a great low carb option! Only 5 net carbs per pita!! I love finding healthy and nutritious keto meals that taste delicious! This chicken pad thai recipe took about 30 minutes to make and totally hit the noodle spot! The sauce was perfect and I felt like I was out at a restaurant! I highly recommend trying it out! INGREDIENTS ⅛ teaspoon ground ginger ⅛ teaspoon garlic powder ⅛ teaspoon sea salt ⅛ teaspoon freshly ground black pepper 2 pounds free-range chicken tenders 2 tablespoons peanut oil 3 large free-range eggs, lightly beaten ⅓ cup organic chicken broth 3 tablespoons peanut butter 2 tablespoons tamari 1 tablespoon rice vinegar ½ cup chopped scallion 2 garlic cloves, minced 1 teaspoon red pepper flakes 4 zucchini, spiralized ½ cup bean sprouts ½ cup crushed peanuts, for garnish 1 lime, cut into wedges, for garnish DIRECTIONS In a medium bowl, mix the ginger, garlic powder, salt, and black pepper. It's my birthday tomorrow and what would a birthday be without cake or cupcakes right? At first, I was afraid that going keto meant no more sweets. I was pleasantly surprised when that wasn't the case. We can have sweets, we just have to make them a little bit differently than in the past. These Chocolate cupcakes with espresso buttercream frosting were some of the best cupcakes I have ever had. So good, I definitely recommend making this recipe for your favorite person! Ingredients Cupcakes: 1/2   cup   butter   melted 7   tbsp   cocoa powder 1   tsp   instant coffee granules   (optional, enhances chocolate flavor) 7   eggs   room temperature 1   tsp   vanilla extract 2/3   cup   coconut flour 2   tsp   baking powder 2/3   cup   Swerve Sweetener 1/2   tsp   salt 1/2   cup   unsweetened almond milk   (more if your batter is too thick) Espresso Buttercream: 2   tbsp   hot water 2   tsp   instant espresso powder   or instant coffee 1/2   cup

Saucy Chicken with Limes

Chicken is a common ingredient in clean keto recipes AND it can get boring some times am I right? This recipe not only helped me to spice up my chicken, but it was also honestly the best chicken I had ever tasted. Maybe that was because of how it was cooked, or the spices, but one thing is for sure...I will be making this one A LOT! INGREDIENTS 2 tsp. ground cumin 2 tsp. ground turmeric 1 tsp. paprika 1 tsp. kosher salt 2 whole skin on chicken breast 1 Tbsp. extra-virgin olive oil 2 limes, halved DIRECTIONS Pre-heat oven to 475 degrees F and place a 10 inch cast iron skillet into the oven.  Take another cast iron skillet that is the same size or smaller. Tear off a piece of tin foil that will cover the bottom of that pan and set aside. In a small bowl mix cumin, turmeric, paprika, and salt. Season both sides of chicken with salt and then with all of the spice rub that you just made. Remove the cast iron skillet from the oven and set it over high
