Pumpkin Alfredo over Zucchini Noodles

I found this recipe over at the Pruvit blog and it was SO good!! Also, very quick and easy to make. I whipped it up for my roommate and she was pretty impressed with my cooking skills even though it only took 10 minutes! So good!  Ingredients: 4 tbsp butter 2 cloves Garlic (minced) 1 cup Heavy cream 1/2 cup Parmesan cheese, grated 1 can pumpkin puree 1/4 teaspoon nutmeg Zucchini noodles Instructions: 1. Melt butter in a large saucepan on medium heat. 2. Add garlic, heavy cream, Parmesan cheese, pumpkin, and nutmeg. 3. Cook until Cheese is melted and sauce is thickened. 4. Serve over zucchini noodles.

Keto Peanut Butter Cups

Holy hell I now know why my fat bombs yesterday sucked! I was meant to make these today to make up for it! Here is what I will say, they were really easy to make and taste better than the peanut butter cups that you get at the store hands down! Happy Halloween month! Ingredients 6   oz   Lily's Dark Chocolate Chips 1/2   cup   smooth peanut butter  (preferably PB fit) 2   Tbsp   butter 1/4   cup   powdered Stevia 1/2   tsp   vanilla extract 1/2  tsp   Pink Himalayan Sea Salt 1   Tbsp   coconut oil Instructions Combine the peanut butter, Stevia, butter, and salt until smooth.  In a microwave, melt chocolate chips, vanilla extract, and coconut oil for 30 seconds to a minute, and stir until smooth.  Drop teaspoonfuls of the chocolate mixture into paper-lined miniature muffin cups.  Drop a scant teaspoonful of peanut butter mixture into each cup, and top with another teaspoonful of chocolate mixture, spreading it around with the back of the tea

Almond Joy Fat Bombs

It's Halloween month which means I'll watch Hocus Pocus 5 times, close my eyes through the Halloween movie a few times, and be tempted by tons of candy that brings me back to my childhood but ultimately leaves me feeling kind of crappy. One way I'm combatting that this month is by recreating my childhood favorites in a keto friendly way! This week we have Almond Joy Fat Bombs. All I can say is, they did the trick for me!!  Ingredients 20   oz   chocolate chips of choice, divided  (I use Lilly's) 1/4   cup   coconut butter, softened 24   whole almonds Instructions Line a 24-count mini muffin pan (or 12 standard sized muffin pan) with muffin liners and set aside. In a microwave-safe bowl or stovetop, melt 3/4 of your chocolate chips of choice. Divide the chocolate mixture evenly amongst the muffin pan, scraping the sides to ensure they are coated with chocolate. Refrigerate until firm. When the chocolate has firmed up, evenly distribute

You guys know what happens once pumpkin season arrives, as soon as fall hits everyone freaks out and gets that crazy pumpkin spice look in their eyes. I'm not knocking it, I am on the pumpkin train too. That is why when I found these low carb pumpkin cheesecake bites over at Low Carb With Jennifer , I couldn't wait to make them! I made them for our keto mixer last Sunday and they were a HUGE hit! I must admit, I made about 30 of them and only 15 actually made it to the mixer. Oops!
