Spaghetti Squash Casserole

Casserole...hot dish...whichever term you use, THIS recipe will definitely make you some friends! This low carb, family friendly dish is packed with taste and NOT packed with carbs making it easy to stick to your low carb plan, and a perfect dish for all the parents asking me for recipes their family will also eat! You're welcome!  Ingredients 1   spaghetti squash   2-3 pounds 1   tablespoon   olive oil 1   teaspoon   salt 1   pound   ground beef 24   ounces   marinara   store-bought or homemade 8   ounces   cream cheese ½   cup   sour cream 1   tablespoon   chopped parsley 2   cups   shredded mozzarella Directions For the squash: Preheat oven to 400 degrees. Spray a rimmed baking sheet with non-stick spray. Cut the spaghetti squash in half length-wise. Scoop out the sides and discard. Keto Cauliflower Chicken Alfredo Recipe

Truth be told, I wasn't expecting much from this recipe. When I think alfredo, I think linguini and so the thought of cauliflower replacing that had me discouraged. That being said, I was wrong! Not only was the recipe delicious but the cauliflower had me feeling full and did the trick as a carb replacement. Next time I am going to try it and add in some zucchini noodles. Overall, this one gets two thumbs up! INGREDIENTS 5 1 ⁄3 oz.  bacon, diced 20 oz.  chicken breasts 4  garlic cloves 1½ oz.  butter 7 oz.  fresh spinach salt and pepper 1½ cups  heavy whipping cream 20 oz.  cauliflower 3½ oz.  grated parmesan cheese DIRECTIONS Fry the bacon until crispy and cooked through. Drain, and set aside in a bowl or on a plate. Cut the chicken breasts into strips. Add butter in the same frying pan with the remaining bacon fat and sauté the chicken and garlic. Set aside when the chicken is thoroughly cooked. Sauté the spinach until it shrinks, but no more.

I have been needing a good soup recipe. Being from Boston, I have been freezing and needed something low carb and delicious to warm me up. Thanks to the Ruled Me blog I have found a winner! This makes 4 (1.5-cup) servings. Each serving comes out to  365.5 Calories, 33.64g Fats, 8.58g Net Carbs, and 16.8g Protein .
