Keto Steak Tacos with Cheese Shells

I know what I am doing this Taco Tuesday!!! Who's coming to join? Seriously though these steak tacos were really easy and quick to make. The cheese shells were on point and were just like regular taco shells. Next time around I am thinking about turning this dish into nachos!! Ingredients: 3/4 cup shredded cheddar cheese, divided 1 packet taco seasoning 1 New York strip steak 1/4 stick butter diced lettuce, for topping diced tomato, for topping sour cream, for topping sliced avocado, for topping sliced jalapeƱo, for topping lime zest, for topping Directions: Preheat oven to 375°F. Line a sheet pan with parchment paper or a Silpat. Set out four glasses that are similar in height and rest a wooden cooking spoon over each pair of glasses. These suspended spoons will be used to shape the tortillas. Divide cheese into three mounds on top of lined sheet pan. Use hand to flatten and spread cheese into circles spaced 1-2 inches apart. Bake for 10-15 minutes

A Week in The Life of Lazy Keto

I have been loving this lazy keto life ! I am feeling amazing, enjoying some pretty awesome recipes, and not to mention looking good. What is Lazy Keto?

By now everyone has heard about the Keto diet (unless you have been living under a rock), but what is this lazy keto thing that everyone keeps talking about? Just in case you HAVE been living under a rock you can find out the basics of the keto diet by clicking here.  Now that we got that out of the way, let's talk about what lazy keto is not. Lazy keto does NOT mean that you just throw all the rules of the ketogenic diet out the window and claim you're keto because you added avocado and bacon to your diet. What it does mean is that you are following the basic rules of keto, without being strict or counting your macros.  For example, if I were to go to a burger place with my friends I would order a cheeseburger with all the fixings, hold the bun, over lettuce, add avocado, add bacon, hold the fries and sub veggies or a side salad. I am still following a ketogenic lifestyle, but I am not going to be counting to make sure that my macros are exactly as they should be

Lemon Garlic Steak with Zucchini Noodles

Yes! I found something totally delicious, filling, and fits into my meal plan. This lemon garlic steak with zucchini recipe completely blew my mind. picture buttery deliciousness in noodle form with perfectly cooked pieces of flank steak and just the right amount of spice...YUM! Ingredients 1 1/2 lb (650g) flank steak, sliced against the grain 4 medium zucchini 2 tablespoons olive oil 4 garlic cloves, minced 2 tablespoons butter or ghee 1 lemon, juice and zest 1/4 cup (60ml) low-sodium chicken broth 1/4 cup chopped parsley 1/4  teaspoon crushed red pepper flakes Salt and fresh cracked pepper, to taste The steak marinade 1/3 cup low-sodium soy sauce or coconut aminos 1/4 cup lemon juice 1/2 cup olive oil 1 tablespoon Sriracha sauce DIRECTIONS 1.  Combine the ingredients for the marinade in an airtight container or a Ziploc bag. Add the steak strips into the marinade, seal and allow to marinate in the refrigerator for 30 minutes to one hour. 2.  

Intermittent Fasting For Beginners

Recently I started a new nutritional journey that includes a low carb lifestyle with intermittent fasting. I must admit, when I first heard the term intermittent fasting it scared the crap out of me...fasting?? really? When I pictured fasting I pictured Gandhi... No disrespect to Gandhi, but I wasn't prepared to starve myself. Luckily intermittent fasting doesn't mean I'm not eating for days and my dramatic self realized that it is actually a really cool concept! Intermittent fasting has been something that is completely doable for me and is now my preferred practice.  The one that most people are familiar with and what most people start with as well as what I follow is called a 16:8 hour fast. Basically, all that means is that within a 16-hour window you are fasting and within an 8-hour window you are consuming your food for the day. All of your food will be consumed in that 8-hour window. Keto Cupcakes with Chocolate Ganache Frosting

I made these cupcakes the other day for my friends birthday everyone loved them! They were quick and easy to make and tasted delicious. The chocolate ganache frosting definitely makes the whole cupcake! I will say that they taste much better when you let them chill in the fridge for a couple hours! Ingredients 1/4   cup   almond flour 2   tbsp   zero calorie sweetener (Swerve)   1   pinch   salt 1/4  tsp   konjac ( Glucomannan ) powder 1/4   tsp   baking powder 2   tbsp   butter,   melted 1   large   egg 1   tsp   vanilla extract   or 1/2 tsp vanilla bean powder 1   tbsp   heavy cream Instructions Heat oven to 350 degrees. Put 4 paper liners in either cupcake tin or silicone cupcake molds on a cookie sheet. Spray with vegetable oil spray, if desired. In a small mixing bowl (or cereal bowl) stir together the dry ingredients: almond flour, sweetener, salt, Glucomannan , and baking powder. Low Carb Garlic Shrimp Zucchini Pasta

Yum!! This one is restaurant worthy! I would definitely pay to eat this. If you want to impress your friends...girlfriend...whoever, this is the recipe for you! Low carb, easy to make, and absolutely delicious. If you don't buy your zucchini already spiralized all you need is a spiralizer. My favorite is the Paderno Spiralizer . I have been using it for years and my zoodles come out amazing! If you try this recipe out, let me know how it goes! I promised you all that as I continue and tweak this low carb/ketone journey that I am on I will share it with you all. So here you go, this is week 2 of my low carb meal plan! I decided this round I would get a little more creative with my meal choices and really mix it up a bit! I am a firm believer that any type of food I love can be ketofied or made into a lower carb option so that is what you will be seeing from me in the future!
