**Low Carb** Roasted Asparagus with Chicken & Chorizo

Holy yum!! Clean keto is the way to go! Everything in this recipe was perfect. It was really quick and easy to make and it tasted delicious! If you want to save even more time, chop and cut all the veggies in advance. I love finding these light and healthy recipes that also fit into my keto lifestyle. Lemon Herb Mediterranean Chicken Salad

I've been loving keto eating but have found myself swaying in the past months to a not so clean version of keto. Now that summer is approaching I am going back to my clean eating roots and keeping my keto clean!! This salad fits right into that and totally hit the spot! The chicken marinade was awesome and also worked well as a dressing. Loaded with avocado and olive oil it has fats, it has protein, it has greens AND fit into my keto lifestyle. **LOW CARB** Baked Eggs & Zoodles with Avocado

I honestly didn't think I was going to like this recipe. I didn't think zucchini and eggs were going to taste good together, I was SO wrong! It was totally delicious, simple to make, and dairy free which I have been trying to do more of. I definitely recommend adding this one to your meal plan! INGREDIENTS 2 servings Nonstick spray 3 zucchini, spiralized into noodles 2 tablespoons extra-virgin olive oil Kosher salt and freshly ground black pepper 4 large eggs Red-pepper flakes, for garnishing Fresh basil, for garnishing 2 avocados, halved and thinly sliced 1. Preheat the oven to 350°F. Lightly grease a baking sheet with nonstick spray. 2. In a large bowl, toss the zucchini noodles and olive oil to combine. Season with salt and pepper. Divide into 4 even portions, transfer to the baking sheet and shape each into a nest. 3. Gently crack an egg into the center of each nest. Bake until the eggs are set, 9 to 11 minutes. **KETO** Cheeseburger Casserole

Everything is better in a casserole, right? We found this cheeseburger casserole easy to make and very delicious, there were just a few things we would do differently because ours came out a little wet. We didn't need to grease the pan and should have drained the beef before adding the cream cheese. We are going to try it again with those two things changed and see if we can make it an even better recipe. All around it tasted delicious and is a really good low carb dish for the entire family.
