Keto Peanut Butter Kupcakes

Who doesn't love a good cupcake? Especially when it fits into your keto life and tastes like a Reese's peanut butter cup! For this weeks recipe Thursday we made Keto Chocolate Peanut Butter Cupcakes that I found over at Joy-Filled Eats .  and let me just say that they were the most delicious cupcakes ever!!  Ingredients: 4 Tablespoons butter softened 1/3 cup Swerve Sweetener   4 eggs 1 tsp. vanilla  1/4 cup sour cream 1 cup almond flour  1/4 cup coconut flour  1 tsp. baking powder  1/4 tsp. salt  Peanut Butter Topping: 1 cup natural peanut butter (no sugar added) 3 Tablespoons Swerve Sweetener  Chocolate Ganache: 7 oz 85% dark or unsweetened chocolate 6 oz heavy cream  1/2 cup Swerve Sweetener  Directions: Preheat the oven to 350 degrees F. Dairy-Free Keto Options

When it comes to following a ketogenic diet, being dairy free can be incredibly difficult. It may seem like all the good snacks and high fat treats are all dairy...which most are, but that doesn't mean you are out of luck if you are dairy free. Many people are allergic to dairy, lactose intolerant, or have dairy sensitivities so today I am going to share with you some dairy alternatives when following the ketogenic diet.  Although there aren't a ton of options, I have found that you can get really creative with the options that we have.  My dairy-free keto go to's are: -Coconut Milk -Coconut Oil -Coconut Cream -Avocado -Nuts -Nut Butters  -Olive Oil -Ghee I love all things coconut so I find it easy to replace dairy with it! There are a ton of good dairy free fat bomb recipes out there as well! I am pumped I found this recipe over at delish . It was so easy to make, only took about 30 minutes total, and was absolutely delicious. I gave this one two thumbs up and will be making it again in the very near future!  Ingredients: 4 Large eggs 2 1/2 cups shredded mozzarella, divided  1/4 grated Parmesan, plus more for garnish  kosher salt  Freshly ground black pepper  1/4 tsp. dried oregano  pinch red pepper flakes (optional) 2 Tablespoons pizza sauce or marinara 1/4 cup mini pepperoni  1/2 Green Bell Pepper, chopped  Directions: Preheat oven to 400 degrees F. and line a baking sheet with parchment paper. In a medium bowl, combine eggs, 2 cups mozzarella, and parmesan. Stir until combined, then season with salt, pepper, oregano and red pepper flakes. Spread mixture into a 1/2 inch thick round on baking sheet.  Bake until lightly golden, about 12 minutes. Spread pizza sauce on top of baked crust. The last weekend in May I had the opportunity to attend an event in Louisville, Kentucky called Ketokademy & More with our company Pruvit. After an intense weekend of education, emotional growth, community, and overcoming obstacles I really wanted to share my experience with all of you.  I have always been a fan of conferences and seminars that pump you up, but this event was on a totally different level. In the past, when I attended such events I always felt energized but not inherently different when I left. I can say with full confidence that attending this specific event helped me break through a major obstacle and removed a block I had been facing for years! The fact that this was an event put on by our company and not something I paid thousands of dollars to attend was pretty amazing as well.  What is Ketokademy & More? I very rarely eat donuts these days. That is why I kind of geeked out when I saw Pruvit share a keto donut recipe on their blog in honor of national donut day! Any opportunity to make a special treat into a blog post, I jump on. Not only were these keto donuts really easy to make, but they were really tasty as well! They definitely hit the spot, and stayed within my nutrition standards!  Ingredients: (makes 12 donuts) 1 Cup almond flour 1 Package of KETO KREME 1/3 cup Erythritol 2 tsp. baking powder 1 tsp. cinnamon 1/2 tsp. sea salt  1/4 cup butter, melted  1/4 cup unsweetened almond milk 2 large eggs  1/2 tsp. vanilla extract  Instructions: Preheat the oven to 350 degrees and grease your donut pan.
