21 Day Fix: Stuffed Bell Peppers

Serves 8 (1/2 pepper each) Prep Time: 20 min.  Cooking Time: 54 min. Container Equivalents (per serving): 1 Green, 1 Yellow, 1 Red, 1/2 Purple This is a recipe from the 21 Day Fix Cookbook, Fixate! They were very good! This time around I actually substituted bison for the chicken and they were still delicious!  INGREDIENTS - 4 medium red (or yellow, orange, or green) bell peppers, cut in half, seeds removed.  -2 tsp. olive oil -1 medium onion, chopped -2 cloves garlic, finely chopped -1 1/2 lb. raw chicken breast, boneless, skinless, chopped into 3/4-inch pieces  -1 tsp. ground chili powder  -1 tsp. ground cumin  -1/4 tsp. sea salt  -1/4 tsp. ground black pepper  -1 cup tomato sauce  -2 cups cooked quinoa  -1 cup canned black beans, drained, rinsed  -1 cup frozen corn kernels  -5 Tbsp. chopped fresh cilantro, reserve some for garnish  -1 Tbsp. fresh lime juice -1 cup shredded Monterey jack cheese  DIRECTIONS 1. 21 Day Fix: Minestrone Soup

Serves 6 (2 cups) Prep Time: 15 min. Cooking Time: 20 min. Container Equivalents (per serving): 3 Green 1 Yellow 1/2 Purple  It's soup season and I LOVE me some Minestrone! It has always been my favorite since I was a little kid. This recipe from the 21 Day Fix cookbook was easy to make, didn't take a lot of time, and totally fulfilled my soup craving!  INGREDIENTS: -2 tsp. Olive Oil -1/2 medium onion, finely chopped  -2 medium carrots, chopped  -2 celery stalks, chopped  -1 clove garlic, finely chopped  -4 cups low-sodium organic vegetable broth -2 cups Tomato Sauce  -1 lb. Swiss chard, stems trimmed, leaves chopped -1 (15-oz.) can cannellini beans, drained, rinsed -1/2 tsp. sea salt (or Himalayan salt)  -1/2 tsp. ground black pepper  -6 tsp. grated Parmesan Cheese  -6 tsp. Growth. New Leader Retreat Destin,FL

Last weekend I had the opportunity to spend 5 days in a house that reminded me of something from The Bachelor, with 40 of the most amazing, driven, motivational, strong, fun, bad ass people I know. It was our teams new leader retreat in Destin, FL and it is one of the many reason I love my job as a coach.  What does a weekend like this entail? Aside from the plethera of Shakeology being made in the morning you can expect fun in the sun, team bonding, networking, business training, drinks, dub smashes, lots of selfies, morning workouts, inspiration, and some serious personal growth .  Lots of positive changes have happened for me throughout my coaching journey, but the change that I value most is the personal growth. As coaches we have the opportunity to meet lots of people from all over...people who inspire the hell out of us! Not only do I get to meet these people, but they have become some of my closest friends and have helped me to grow in ways I never knew
