Low Carb "Almond Joy Bars"

All I can say about this one is WOW! I got the original recipe over at Whole New Mom and my look NOTHING like hers, but that didn't matter one bit. These were absolutely delicious and I totally recommend them! These bars are low carb, vegan, and gluten-free were easy to make, easily stored in the freezer, and are loaded with coconut oil and other healthy ingredients! 
Ingredients Chocolate/Carob base 1/2 cup coconut oil1/2 cup almond butter1/4 cup xylitol or substitute 6 Tbsp cocoa (for more health benefits use raw cacao or carob)1-1/2 scoops Stevia 1 tsp. vanilla Coconut Topping 1-2/3 cup unsweetened coconut flakes 7 Tbsp coconut oil 1/3 cup granulated sweetener (or 2-3 scoops stevia extract powder)1-1/2 tsp. vanilla 1/4 tsp. additional flavoring (I used Almond)2 tsp. arrowroot powder (or use 1/16 tsp of xanthan gum or glucomannan if you need to avoid these foods)Almond halves or slices (optional)

Keto Diet for Beginners

When I first heard about the keto diet there was so much information thrown my way that I felt really overwhelmed. All I wanted to know was the basics. Where do I begin? What do I eat?  That is why today I put together a few basics to help you get started on your ketogenic journey. 
The first thing I learned about the keto diet was that I was going to want to keep my carbs between 20-25 net carbs a day. What's a net carb? That is when you take your carbs and subtract the fiber and sugar alcohols to get your net. 


I also learned that I wanted to keep my diet around 70% fat, 25% protein, and 5% carbs. I use the My Fitness Pal app to help me keep track of this! Most of your carbs on this diet should be coming from green veggies such as spinach, kale, and collard greens.

Recipe Thursday: Low Carb Waffles

I have been craving waffles for a while now, so when I came across this recipe I was all over it. Here's the deal, I am sharing two versions of this recipe. One version for my strict keto friends, and another version for my "keto-ish" vegan friends. The good thing about drinking exogenous ketones is that I don't need to eat a strict ketogenic diet 100% of the time to feel the effects of ketosis. So do with this recipe what you like, but I was pretty impressed with these healthy, lower carb waffles that I found here on The Big Man's World website!
