There's a new Workout in town...Country Heat!

I never in a million years thought I would see this day, but it is here! Country line dancing meets fitness.... Celebrity trainer and professionally trained dancer Autumn Calabrese (you might know her from that 21 Day Fix thing) decided to help you burn calories with a little twang! Her new program being released this July called Country Heat is a country dance inspired workout!  Ms. Autumn is apparently a long time country music and dance lover and wanted to pair her love for country with her love for fitness. She came up with a high energy, low impact dance workout that ANYONE can do...even if you have two left feet. 30 minutes of non stop dancing to today's hottest country hits are a sure way to get your sweat on and make you smile as well! Who knows, maybe you might hear a little something from my cousin Jo Dee Messina !! I felt deep down that I wasn't living up to my potential...I was missing out. Although I had always known that I was meant for more, I pushed that feeling aside time after time because I was scared to take action. What if I failed? What if I was wrong? What if I looked stupid? Homemade Vegetable Soup

I was feeling sick the other day and needed some soup in my life STAT. This was a very basic, easy to make recipe that satisfied my craving. INGREDIENTS: 1 Tablespoon olive oil 1/2 Large Onion, chopped  2 ribs celery, chopped 2 carrots, sliced 2 cups mixed chopped vegetables (I used green beans and broccoli) 1/2 tsp. Himalayan salt 1/2 tsp. garlic powder  1 tsp. thyme  1 tsp. oregano  1 bay leaf 8 cups vegetable broth DIRECTIONS: Heat the oil in a large soup pot Add onion, carrots, celery, heat 3-4 minutes until onions are soft. Add the rest of the veggies and heat for another 1-2 minutes. Add salt, garlic powder, thyme, and oregano. Stir so that the spices coat all of the vegetables.  Add Bay leaf and broth, bring to a simmer. Remove bay leaf and serve! Top with Parmesan or dairy free cheese and enjoy! 

Spaghetti Squash Enchilada Bowl

I tried this the other day and it was so good!! In addition to the recipe I also topped with home made guac and salsa! Yum! INGREDIENTS: 2 small spaghetti squash 2 teaspoons olive oil 1/8th teaspoon Himalayan salt  black pepper to taste 1 Cup shredded Mexican Cheese (I used dairy free almond milk cheese) DIRECTIONS: Pre-heat oven to 400 degrees F Cut squash in half length wise and use spoon to scrape out seeds  Brush the inside of squash with olive oil and sprinkle lightly with salt and pepper Place the squash face down on a baking sheet and bake for 40-45 minutes. Once the squash is cool enough to handle use a fork to scrape the inside so that the spaghetti like strands appear.  Spoon enchilada sauce mixture into the squash so that it is almost full Top evenly with cheese and transfer back into the oven until the cheese is melted. Remove from the oven and top with whatever other toppings you would like!
