Clean Eating Chicken Noodle Soup

This weekend I was feeling a little bit under the weather and was sick of canned soup. This recipe was quick and easy. I must say I was impressed...it tasted DELICIOUS! I found the basis for the recipe at The Gracious Pantry, but added some of my own things in! Enjoy Ingredients: Any veggies you can put together, chopped small Veggie broth and/or chicken broth, no sugar added, low sodium No sodium vegetable bouillon Garlic powder Onion powder Cooked whole wheat noodles ( I only used a small amount, about one serving of whole wheat spaghetti broke in half) 2 cooked chicken breasts chopped  Directions: For every cup of chopped veggies, use approximately 2 cups broth. (I used 4 cups chicken broth, 4 cups vegetable broth) For every 2 cups broth, use 1 bouillon cube. For every 2 cups broth, stir in 1 teaspoon of onion powder and 1 teaspoon of garlic powder. Bring everything to a boil and cook until the veggies are fully cooked. Allow to cool and salt to taste

No Bake Chocolate Shakeology Truffles

     CHOCOLATE SHAKEOLOGY TRUFFLES  A friend of mine made these for me this valentines day! She left them in a ball so they would be more like a truffle, but you can also flatten them into a cookie. They were so good! and without the guilt!  You can also box them up and give them as a gift! Total Time:  10 min. Prep Time:  10 min. Yield:  25 cookies Ingredients: • 1 cup natural peanut butter or almond butter • 1 cup quick cooking oats • ½ cup honey • 1 cup Chocolate Shakeology Preparation: 1. Combine peanut butter, honey, oats and Shakeology in medium bowl. Mix well.  2. Roll 24 balls, each the size of 1 tbsp. 3. Flatten each slightly so takes on the shape of a traditional cookie. (Optional)  Nutritional Information (per serving): Calories: 115 Fat: 6g Saturated Fat: 1g Cholesterol: 2mg Sodium: 39mg Carbohydrate: 15g Fiber: 1g Sugar: 7g Protein: 5g

                                  Cinnamon Banana Pancakes I found this recipe on The Gracious Pantry and made them in honor of National pancake day....they were so good and easy! I used Agave Nectar instead of syrup.  Ingredients 1 ripe banana 1 whole egg 1 cup of whole wheat pastry flour 2 cups of unsweetened almond milk 1/2 teaspoon ground cinnamon 2 teaspoons of baking powder Directions Step 1 – In a large mixing bowl, whisk all ingredients together until you have a smooth, slightly thin batter. Step 2 – Using a non-stick pan, use a small amount of oil to coat the pan. This is more for browning the pancakes then anything. So you really do not need much. The pancakes will end up being browner than a normal pancake due to the banana. Step 3 – Pour the batter into the pan, but keep the heat somewhere between low and medium. This won’t cook properly on high heat. They take a little longer to cook, but they are totally worth it. Step 4 – Serve with maple syrup, or

                  Apple Pie Oatmeal 1 cup of water 1 cup of unsweetened non-milk (coconut milk,  almond milk ) 2 apples cored and chopped 1 cup of rolled oats (bob's Red Mill gluten free oats) 1 teaspoon of vanilla extract 1/2 teaspoon of cinnamon 1/8 teaspoon of nutmeg 1/8 teaspoon of salt Add all the ingredients to a medium saucepan over medium to high heat. Once it begins to bowl, reduce to a simmer stirring occasionally. Cook until it thickens (about ten minutes). Can serve in a bowl and top with extra cinnamon, nutmeg, and walnuts (optional) Lasts a couple days!

            Clean Eating Spicy Buffalo Wings This is a recipe I found on The Gracious Pantry website and made for the Super Bowl. I liked the tenders most! It was really quick and easy to make! Perfect for when you want to bring a clean app to not so clean eating people. I substituted agave nectar for the honey.The Recipe makes 8 servings (about 1/2 lb each). Sauce Ingredients: 1 cup Frank’s Hot Sauce (or any clean hot sauce you like, low sodium is best) 1 tablespoon olive oil 1 tablespoon garlic powder 1 tablespoon onion powder 1/2 cup honey (if you prefer a less spicy wing) or 1/4 cup (if you prefer a more spicy wing)  2 teaspoons molasses 1 teaspoon paprika 1/2 cup clean BBQ sauce  Chicken Ingredients: 4 pounds chicken wings 2 tablespoons olive oil 1 tablespoon garlic powder 1 tablespoon onion powder    Directions: Preheat oven to 350 degrees F. How I enjoyed the Super Bowl guilt free

Let's be serious, in the past the Super Bowl for me was just an excuse to get drunk and mow my face off. Unless the Patriots were playing I don't even think I watched the screen other than for commercials and the half time show (which I must say was AMAZING this year! Props to my girl Beyonce!) and the only reason I checked the score was to see if I was winning any money on squares.  This year, with my new lifestyle , I took a different approach. Instead of spending my time before kick off killing beers which ultimately would end up with me being cross eyed before the game even started, I spent my time cooking. I found two of my favorite classics in clean eating form on The Gracious Pantry   website! My sister and brother in law (who I sucked into doing my most recent beachbody challenge and are kicking ass) invited me over to watch the game and eat clean!
