Keto Zucchini Bread with Walnuts

Thank you to the Ruled Me blog for this one because it is most definitely in my top 5 of keto recipes made thus far! It was incredibly easy to make, but most importantly tastes freaking delicious! It totally reminded me of the bread my dad brings to Christmas morning. In fact, I just realized that next time I am going to toast it just like he does! The walnut crust adds a really nice crunch! makes 16 slices INGREDIENTS: 3 large  eggs ½ cup  olive oil 1 teaspoon   vanilla extract 2 ½ cups   almond flour 1 ½ cups   erythritol ½ teaspoon  salt 1 ½ teaspoons  baking powder ½ teaspoon  nutmeg 1 teaspoon  ground cinnamon ¼ teaspoon  ground ginger 1 cup  grated zucchini ½ cup  chopped walnuts DIRECTIONS:  Preheat oven to 350°F. Whisk together the eggs, oil, and vanilla extract. Set to the side. In another bowl, mix together the almond flour, erythritol, salt, baking powder, nutmeg, cinnamon, and ginger. Set to the side. Did they taste exactly like fries? No! Did these jicama fries do the trick? Yes! For me, consistency is huge and these jicama fries totally mimicked what fries would taste like. Jicama is a bit higher in carbs than radish or turnip. So if you are on a strict keto diet, you may want to use those root vegetables instead but if you are lazy keto/low carb like I am, they fit perfectly into my plan!  Ingredients 2 cups jicama sliced (about 1 small) 2 tablespoons avocado oil 3/4 teaspoon sea salt divided 1/4 teaspoon garlic powder 1 teaspoon cumin 1 teaspoon smoked paprika Instructions 1. Peel jicama and slice into french fry pieces. 2. Sprinkle 1/2 teaspoon sea salt into a medium pot of water. Bring to a boil. 3. Boil jicama fries in boiling water for 10 minutes. With all the girl scout cookie sales going on around me I had to find a keto friendly version of my girl scout favorites! These keto Samoa bars not only fulfilled our girl scout cookie craving but to me tasted even better! Ingredients Crust 1 1/4   cups   almond flour   1/4   cup   Swerve Sweetener 1/4   tsp   salt 1/4   cup   butter, melted Chocolate Filling and Drizzle: 4   ounces   sugar-free dark chocolate , chopped 2   tbsp   coconut oil or butter Coconut Caramel Filling: 1 1/2   cups   shredded coconut 3   tbsp   butter 1/4   cup   Swerve Brown 1/4   cup   Bocha Sweet   or additional Swerve Brown 3/4   cup   heavy whipping cream 1/2   tsp   vanilla extract 1/4   tsp   salt Instructions Crust: Preheat the oven to 325F.  In a medium bowl, whisk together the almond flour, sweetener, and salt. Keto French Toast Sticks

Made these bad boys for my girlfriend this morning and they were SO stinking good!! I can't believe that these are low carb!  INGREDIENTS 2 Large Slices Keto Bread!  Recipe Here 1 Large Egg 1 tbsp Heavy Cream 1/2 tsp  ground cinnamon 1/4 tsp  vanilla extract Liquid Stevia  Optional(10 drops per recipe makes these mildly sweet) 1 tbsp butter for cooking INSTRUCTIONS If you haven't already, start by baking a loaf of Keto Bread Cut 2 large slices of bread, then cut each slice into 4 french toast sticks. Beat together the egg, heavy cream, cinnamon, vanilla, and optional sweetener. Heat 1 tbsp of ghee in a nonstick skillet over medium heat. Dip the sticks of bread into the liquid mixture and then place directly into the hot skillet. (If you want a softer french toast stick, allow the batter to soak into the bread for 5 minutes prior to frying.) Server with butter and sugar-free syrup and dust with cinnamon. Enjoy! This keto bread recipe that I found over at Keto Connect is a winner!! Good for sandwiches, french toast, croutons, avocado toast...it is so good! INGREDIENTS 1 1/2 Cup  Almond Flour 6 Large eggs Separated 4 tbsp Butter, melted 3 tsp  Baking powder 1/4 tsp  Cream of Tartar   1 pinch  Pink Salt 6 drops  Liquid Stevia  optional INSTRUCTIONS Preheat oven to 375. Separate the egg whites from the yolks. Add Cream of Tartar to the whites and beat until soft peaks are achieved. In a food processor combine the egg yolks, 1/3 of the beaten egg whites, melted butter, almond flour, baking powder and salt (Adding 6 drops of liquid stevia to the batter can help reduce the mild egg taste). Mix until combined. This will be a lumpy thick dough until the whites are added. Add the remaining 2/3 of the egg whites and gently process until fully incorporated. Be careful not to overmix as this is what gives the bread it's volume! Pour mixture into a buttered 8x4 loaf pan. B

Keto Thin Mints

Dude!!! I found these sugar-free, gluten-free, low carb cookies over at All Day I Dream About Food and holy crap they were perfection! We had a house full of kids who normally avoid anything that is sugar-free and the entire plate was demolished! If you are a thin mint monster like I am but also living a low carb sugar-free lifestyle, this recipe is for you!  PREP TIME: 30 MINUTES COOK TIME: 30 MINUTES TOTAL TIME: 1 HOUR INGREDIENTS Cookies 1 3/4 cups almond flour 1/3 cup cocoa powder 1/3 cup swerve sweetener  1 tsp. baking powder 1/4 tsp. salt 1 large egg slightly beaten  2 Tbsp butter melted  1/2 tsp. vanilla extract  Coating 1 Tbsp coconut oil 7 oz Lily's dark chocolate  1 tsp. peppermint extract  DIRECTIONS Cookies Preheat the oven to 300F and line baking sheets with parchment paper. If you want dense delicious brownies that also have a serving of ketones in them, this is the recipe for you! The salted caramel bone broth makes the brownie and has a full ketone serving! So good, and fit right into my plan! Ingredients: 1 cup mashed avocado 1 cup swerve sweetener 1 tablespoon vanilla 1 tsp. baking soda 1 cup dark cocoa powder 2 eggs 1 packet of Pruvit Salted Caramel Bone Broth 1/2 cup Lilly's chocolate chips Directions: Preheat to 350. Line cookie sheet with parchment paper Combine all ingredients, except chocolate chips in a mixing bowl  Mix until combined. Stir in chocolate chips  Drop by spoonfuls and lined baking sheet. Bake for 10 to 12 minutes or until done.
