Pumpkin Alfredo over Zucchini Noodles
I found this recipe over at the Pruvit blog and it was SO good!! Also, very quick and easy to make. I whipped it up for my roommate and she was pretty impressed with my cooking skills even though it only took 10 minutes! So good!
Ingredients:
4 tbsp butter
2 cloves Garlic (minced)
1 cup Heavy cream
1/2 cup Parmesan cheese, grated
1 can pumpkin puree
1/4 teaspoon nutmeg
Zucchini noodles

Instructions:
1. Melt butter in a large saucepan on medium heat.
2. Add garlic, heavy cream, Parmesan cheese, pumpkin, and nutmeg.
3. Cook until Cheese is melted and sauce is thickened.
4. Serve over zucchini noodles.
