Keto Thanksgiving: Cauliflower Mash

I definitely was not expecting the amazingness that was this recipe. I have had cauliflower mash in the past, and there really aren't any special ingredients, but it was SO good! I honestly feel like we could fool some people with this one. I will absolutely be bringing this over to my parent's house this Thanksgiving! 



Ingredients


  • 1 medium Cauliflower approx. 1.4lb
  • 3 ounces Butter
  • 1 teaspoon Salt
  • 1/2 teaspoon Pepper


Instructions


  1. Bring a large pot of water to the boil.
  2. Cut the cauliflower into evenly sized florets.
  3. Gently add the cauliflower to the boiling water and cook for 5-8 minutes, until the cauliflower is tender.
  4. Drain the cauliflower really well and return it to the warm pot.
  5. Add the butter, salt, and pepper.
  6. Blend the cauliflower with a stick blender until there are no lumps.
  7. Allow the mash to sit and rest for 3 minutes and then blend a second time. This rest and blend step makes the cauliflower extra smooth and creamy.
  8. Serve and enjoy.
