Clean Keto Cauliflower Rice Taco Bowls
These clean keto cauliflower rice taco bowls were easy to make and totally hit the spot. Although perfect for me, you can make some substitutions. Any cheese will do in place of the cheddar. If you're wanting more veggies you can serve it over a bed of spinach or greens and for the protein ground turkey, chicken, or pork will be just as tasty. Adjust the recipe to your liking and enjoy this clean keto meal!
Ingredients
For taco meat:
- 1 tsp. olive oil
- 1 lb ground beef or bison
- 1 tsp. paprika
- 1 tsp. pepper
- 1 tsp. chili powder
- 1 tsp. garlic powder
- 1/2 tsp. salt
- 1 tsp. onion powder
- 1 tsp. cumin
For Cauliflower Rice:
- 1 lb cauliflower rice
- 1 tsp. olive oil
- 1/4 cup lime juice
- 2 Tablespoons fresh cilantro, chopped
For the toppings:
- 1 cup avocado, sliced
- 1 cup sour cream or greek yogurt
- 1 cup shredded cheddar cheese
- 1 cup tomatoes, halved
- 1 cup olives, halved
Directions
- In a pan, heat 1 tsp. olive oil. Brown ground beef until almost cooked through-about 10 minutes. Stir in the spices and cook for an additional 10 minutes.
- While beef is cooking, in a separate pan heat the remaining oil. Stir in cauliflower rice, saute over low heat. Add lime juice and cilantro. Cook for 5 minutes, set aside.
- Once the cauliflower rice and beef have cooked, you can assemble your taco bowls with toppings!
